SALMON AND EGG WRAP

These tasty wraps are great for a quick and easy meal. The wraps can be made several hours ahead and left in the fridge.
Ingredients
12 slices of smoked salmon
3 hard-boiled eggs, chilled, peeled and sliced
100 g of spinach
6 large wraps bread
Mustard mayonnaise
100 g light mayonnaise
3 tablespoons Dijon mustard
1 small red onion very finely sliced
Step 1
Mix mayonnaise and mustard, divide into 2 small bowls and then stir onions into one bowl.
Step 2
Spread a layer of onion mayonnaise over each wrap and add 2 slices of smoked salmon, then sliced hard-boiled egg and a lot of spinach to each. Roll tightly. To serve, cut each wrap into 2 pieces. Serve with the extra mustard mayonnaise.
